One recipe (http://recetasdecocinatomo1.wordpress.com/2009/02/06/otra-de... gives
“Se pela y pica perón, pera, durazno, membrillo y granada: el caldillo se prepara con agua de canela, jugo de naranja dulce y la azúcar necesaria.” So presumably perón is not a sort of pear: “Perón y pera”)

crab apple (Pyrus malus)

I don't think it's pear apple, because that's Pyrus pyrifolia: http://en.wikipedia.org/wiki/Pyrus_pyrifolia

As far as I can see, perón is Pyrus malus:

So I would suggest you could translate it as 'crab apple' or 'wild apple';
