Como viene siendo tradicional, la presencia de la provincia de Huelva en Fruit Logística es protagonista durante una jornada. En la edición pasada, todo el sector de la fresa y de los cítricos onubenses allí representados ofrecieron una recepción institucional de la mano de la Cámara de Comercio de Huelva y el apoyo de la Diputación de Huelva a la que acudió una nutrida representación de organismos institucionales presentes en la feria.

I know what it means but can't think of a 'catchy' equivalent. TIA!

How long does the fair run for? If only one day, then I would leave out the 'durante un jornada' part.

Why not?? This would be a perfectly correct use of the English word protagonist. And I actually think it sounds quite natural and appropriate.
