: I couldn't agree with this, as in EN this word order would suggest that 'confit' was some special breed of lamb, for example; the 'milk-fed' and 'lamb' must stay together, and the 'confit' (if retained) placed elsewhere.

We usually speak abt suckling pig, so I believe this is the same in the case of a lamb. The fact it sucks milk. (which is more precise and elegant than Milk fed)

: Not so much about precision as the use of a slightly archaic term that gives the dish an aura of tradition. NB the ewe suckles the lamb and 'suckling' would be derived from the verb 'to suckle', rather than directly from the verb 'to suck'.
