Credo che si intenda che l'apertura e chiusura viene attuata quando si raggiunge la temperatura impostata, con una piccola differenza.
Es. se si imposta 30 °C, può essere che scatti a 28 o a 31 °C

That's how I would translate it. If there is a number after it, I would say "at approximately X [degrees Celsius or Farenheit]."

This is my guess regarding what it could mean.

The manual was written by an Italian engineer and the expression appears about 900 times in Google in similar sentences, so I think it does exist exactly like that. Thanks for the help!
