That's exactly why I put it up as a reference rather than an answer. I'm stuck in the middle of a large translation otherwise would love to do a bit of research. It seems that the presence of unripe grapes gives the wine a particular taste/aroma which some see as good, some as bad. Possibly something along the lines of 'a balanced wine with no vegetal notes ..... seeking the right balance between maturity and immaturity.

Vegetales OK, but it seems that this term is used as an adjective, not on its own, as a noun (vegetal tones, vegetal characteristics, a vegetal wine...) No?
