Not sure about "limp la grasa" here.

The full sentence:

"Los cavas son perfecto para la tabla de quesos pues el carbónico limpia la grasa y deja la boca limpia."

The source below talks about the acidity cutting through the fat, I think this is the same idea; it cuts through the fat and leaves the mouth feeling clean.

An option. "Bubbles" sounds a bit more enticing than "carbonic/carbonation"...

An alternative to "bubbles" could be "fizz"...
"The bright acidity and bubbles give life to your tongue, and the fizz cleanses the palate with each sip."

And, for the more picky among us who don't like "fat/grease", "cleanse the palate" is a standard expression, as in the example above.

Based on the following, I think I would use something like 'the carbon dioxide gas leaves the mouth feeling fresh and clean'.

Aftertaste: The "shadow taste" remaining in your mouth just after swallowing a sip of wine. Sparkling wines strive for a special delicacy in the taste; a taste which quickly "melts away" after swallowing, leaving your mouth fresh and clean.

agree neilmac : I don't agree that "fat" doesn't work. To me, fat and grease are six of one and half a dozen of the other.

I associate 'limpia la grasa' with an advert for washing up liquid or a product for cleaning the kitchen!
