What is the term in meat industry for half-carcass and quarter-carcass?
The term for the whole carcass is "slaktekropp", but what are the smaller units?

Skrott is just that - a generic Norwegian word for a dead, reasonably whole animal. Slaktekropp is a butcher's term.

So is the whole animal just "skrott" or "slaktekropp" is okay?

halvt slakt; frampart/bakpart

This is often referred to as a slakt (e.g. et helt/halvt slakt).

If you know which part of the animal it is, you can also refer to it as a frampart or bakpart, respectively.
